Ayurvedic winter soup with pumpkin and lentils
Ingredients:
- 1 small pumpkin, peeled and diced
- 1 cup red lentils
- 1 medium onion, finely chopped
- 2 garlic cloves, Chopped
- 1 tablespoon ghee (or olive oil)
- 1 teaspoon cumin seeds
- 1 teaspoon turmeric
- 1/2 teaspoon cinnamon
- 1 teaspoon freshly grated ginger
- 4 cups vegetable stock
- Sea salt and pepper to taste
- Optional: a handful of fresh coriander
Procedure:
- Heat the ghee in a soup pan and add cumin seeds. Let it brown a bit until the fragrance is released.
- Add the onion, garlic and ginger and fry until translucent.
- Add turmeric and cinnamon, followed by the cubes of pumpkin. stir well so that the spices coat the pumpkin.
- Add the redder lentils and vegetable stock. Let the whole 20-25 minutes until the pumpkin and lentils are soft.
- Use a hand blender to puree the soup until smooth or leave it coarse.
- Season with salt and pepper and garnish if necessary. with fresh coriander.
This recipe is suitable for 2 – 4 people.
